Leather Tanning process, animal feed, bakery, condiments, beer, soy sauce and other industries.
Principle
Neutral protease, as a hydrolytic enzyme, is mainly composed by endopeptidase, aminopeptidase and carboxypeptidase, these enzymes act on peptide bond in molecule, hydrolysis protein into peptides, oligopeptides and amino acids under neutral conditions.

1. Temperature range: effective temperature range 25-55ºC, the optimum
temperature 43-50ºC.
2. pH value range: effective pH range 6.2-9.0, the optimum pH value range 6.8-7.6.
3. Effects of metal ions on enzyme activity: metal ions Ca2+,Mg2+,Fe2+ have active
effects on enzyme, Mn2+,Cu2+,Ag2+ and EDTA inhibit enzyme activity.

Enzyme activity definition:1g solid enzyme powder (or 1ml liquid enzyme), under conditions of 30ºC±0.2ºC, pH 7.5, 1min casein hydrolysate produce 1µg tyrosine, mean 1 enzyme activity unit, show u/g (u/ml).
Application Method
1. In leather processing industry, neutral protease is used to remove hair and soften, it has advantages of clean hair removal, no damage and pore meticulous brightly etc. In remove hair, dosage is 3-6kg/t material, soften dosage 0.15-0.3kg/t material, enzyme activity calculated in 50,000u/g, same below.
2. Add neutral protease into animal feed compound enzyme, can improve protein utilization, reduce feed cost, the enzyme dosage is generally 0.02-0.10kg/t complete feed.
3. In bakery industry, the enzyme can weaken dough strength, impact dough excellent plasticity and extensibility after using the enzyme, production of biscuits section structured, loose and cool crisp, enzyme dosage 0.1-0.3kg/t flour, add when knead dough.
4. In the production of animal and plants protein hydrolyzate powder condiments or animal origin extract, the enzyme have advantages of high speed on hydrolysis, soft flavor etc, dosage 1-3kg/t raw material, hydrolysis 2-24 hours under the optimum conditions.
5. In the brewing process of beer, wine, soy sauce, add this enzyme can clarify the fermentation broth and product, eliminate cold muddy. Dosage is 0.2-1.0kg/t dry.
6. In cheese production, the enzyme can quicken maturity without influence cheese flavor and quality. Neutral protease dosage is 0.02-0.10kg/t raw material.
